Chicken & Rice Muffins
For our first practical we made Chicken and Rice Muffins. The recipe we followed was pretty simple and it was also made easier as the high risk foods were already cooked for us. I think that the group I worked with worked well together and we were able to complete the practical to a high level with time left over. Next time I think we could do a better job of evening the jobs out/ making more jobs for everyone as there were points during the practical where we were just standing with nothing to do.
Here is the recipe that we followed:
Ingredients:
2 cups jasmine rice
1/2 tablespoon olive oil
1 chicken breast
1/2 carrot
1-2 spring onion stalks
3/4 grated mozzarella cheese
2 eggs
Method:
- preheat oven to 200 degrees Celsius
- slice chicken in half width ways
- heat oil in frying pan & cook chicken until golden brown
- Remove chicken from pan & shred chicken
- Grate carrot
- finely slice spring onion
- lightly beat eggs
- in bowl add cooked rice,chicken,carrot,spring onions,eggs & some cheese (not all at once)
- spray muffin tin & spoon mixture in, add the rest of the cheese on top
- Place in oven and let cook for 15min - until golden brown
- Let trays sit, remove from tray to cool
